Eggplant Moussaka
I just love to visit my parents garden and collect fresh vegetables from there. This time I collected tomatoes, bell peppers, cucumber, zucchini and eggplant and I tried some recipes with this. Today I propose you eggplant moussaka. A recipe that me and my family love to eat.
Ingredients:
-2 eggplants, sliced into 1/4 inch rounds
- 3-4 tomatoes, sliced
- 2 green bell peppers, sliced
- 150 g boiled or grilled chicken breast (optional)
- 200 g fat free cheese

Vegetable Stir-Fry
Stir-fries is an easy way to get dinner on the table fast with minimal cleanup. You can add different types of vegetable. The secret to good stir frying is not to put too much in the wok at the one time, if you do, the vegetables will sweat instead of frying.
Ingredients:
-1 red bell pepper, cored, seeded, and julienned
-1 yellow bell pepper, cored, seeded, and julienned
-100 g steamed green bean
-1 sliced onion
-2 cloves garlic, minced
-1 teaspoon olive oil (optional)
- 2 tablespoon soya sauce
- salt, pepper
Homemade cream cheese
Egg White Frittata
This recipe can be easily addapted for Atack phase or PP days if you don`t use mushrooms.
Ingredients:
-1 cup sliced fresh mushrooms
- 1/2 medium onion (or green onion), diced
- 100 g turkey ham
- 1/4 teaspoon salt
- 1/4 teaspoon dried oregano
- Dash pepper
