Chicken salad with yogurt lemon dressing
Ingredients:
- 1 chicken breast
- 3 plum tomatoes, coarsely chopped
- 4 scallions, thinly sliced
- 1 fat free yogurt
- 1 teasoop fresh lemon juice
-1 teaspoon grated lemon zest
- Salt, pepper, oregano
- ½ lettuce
How to prepare
Season the chicken with salt, pepper and oregano. Put it on a grill or bake-it for 25-30 min into the oven (at 180oC/350oF/Gas 4).
In a large bowl, whisk together yogurt, 1 teaspoon lemon zest, 1 teaspoon fresh lemon juice, salt, pepper. Add tomatoes and scallions; toss to combine.
When the chicken breast is ready thinly slice meat lengthwise and add to bowl.
In a separate bowl, whisk together some lemon juice and 1 teaspoon olive oil. Add lettuce and toss to coat. Divide among plates; spoon chicken mixture on top.
